I often find myself struggling to decide what to eat for lunch. I stand in front of the fridge, pacing back and forth, fighting with my confused taste buds and growling tummy. It’s that nebulous time of day when your stomach is still on breakfast, but your mind is thinking about dinner.
Chicken salad is a perfect solution to beat the lunchtime blues. You can easily switch out ingredients, ratios, etc., to find the ideal combination to suit your fancy. And that’s exactly what I did with this Sweetly Curried Chicken Salad – it’s a little bit of sweet, a little bit of heat and a lot of tasty, just the way I like it. And this is SO easy, you may find yourself changing up the ingredients and having it once a week!
Sweetly Curried Chicken Salad
1 rotisserie chicken, de-boned and chopped
1 cup red seedless grapes, halved
½ cup green onion, finely sliced
¼ cup dried cranberries
¼ cup celery, chopped
2 ½ teaspoons curry powder
¼ cup mayonnaise
1 teaspoon honey
½ lemon, juiced
Salt and pepper to taste
¼ cup sliced almonds
Combine the chicken, grapes, green onion, dried cranberries and celery, and set aside.
Combine mayonnaise, curry powder, honey, lemon juice and salt and pepper. Pour over chicken mixture, mix well and chill for about one hour.
Just before serving, stir in the almonds. Pile high on a fresh croissant and enjoy!
